1. Pie:

  • 1 store-bought pie crust.
  • 3 Bramley apples, diced
  • 3/4 cup of sugar
  • Juice of 1 lemon
  • 1 tsp of grated nutmeg, cinnamon and clove each

Method:

  1. Cook the apples with the spices until they lose a little crunch.
  2. Fill in the pie shell and bake at 350 degrees F for 25 minutes.

2. Crumble:

  • 3 Bramley apples
  • 250 g flour
  • 150 g frozen, cubed butter
  • 200 g sugar

  • 3 lbs cored, peeled and chopped Bramley apples
  • 7 cups sugar
  • 2 ounce pectin
  • 3 cups water

Method:

  1. Boil small chunks of apple until they soften; mash them and simmer for a few more minutes.
  2. Now juice the apples and strain to remove any solid.
  3. Stir the sugar and put it back on the heat.
  4. Add pectin to the boiling juice, stirring constantly for 1 minute.
  5. Pour into sterilized jars, let it cool and then refrigerate to set.

  • 2 peeled and cored Bramley apples
  • ½ cup raisin
  • 1/3 cups sugar
  • 1 tsp ground ginger
  • Apple cider as needed

Method:

  1. Chop apples and toss in raisins, sugar, ground ginger and a splash of apple cider.
  2. Cook until the mixture is thick and pulpy.
  3. If needed, add more apple cider by the tablespoon to loosen the mixture.

Method:

  1. Chop apples and add these to a pot full of water with the sugar and spices.

  1. Boil chopped, peeled apples in lemon juice and apple juice with sugar.
  2. Blend the mixture when cool.
  3. To make sorbet without an ice-cream maker, freeze the mixture for 10 minutes, then take it out and blend it well.
  4. Freeze it again and repeat the process as many times as possible to get a smooth texture.

  • ¾ cup muscovado sugar

  • 50 g butter

  • 1 tsp vanilla extract

Method:

  1. Layer slices of apple at the bottom of the pudding mould and sprinkle with caster sugar.
  2. To make pudding mixture, mix flour, muscovado sugar, baking powder, salt, butter, milk and vanilla extract.
